KUMQUAT, ARUGULA & KALE SALAD

INGREDIENTS

2 cups arugula leaves

1 tablespoon olive oil

1 tablespoon balsamic vinegar

2 cups kale, torn

3 tablespoons red onion, chopped

4 kumquats, sliced

1 small avocado, pitted, peeled and cubed

½ cup walnuts, chopped

DIRECTIONS

In a bowl, combine all the ingredients, toss, divide between plates and serve.
