CHAI COCONUT PANCAKES

INGREDIENTS

3 eggs

¼ cup coconut flour

¼ cup coconut water

1 teaspoon coconut oil

½ plantain, peeled and chopped

¼ teaspoon baking soda

¼ teaspoon chai spice

1 tablespoon shaved coconut, toasted for serving

1 tablespoon coconut milk for serving

Berries (optional)

DIRECTIONS

In a food processor, mix eggs with coconut water and flour, plantain, baking soda and chai spice and blend well. Heat up a pan with oil over a medium heat, add ¼ cup pancake batter, spread evenly, cook until it becomes golden, flip pancake and cook for 1 more minute and transfer to a plate. Repeat this with the rest of the batter, divide all the pancakes between plates and serve with the coconut and coconut milk.
