ORANGE, NUT & SEED COOKIES

INGREDIENTS

5 ounces dates, soaked in hot water

Juice of 1 orange

Grated rind of ½ orange

1 cup desiccated coconut

½ cup silvered almonds

½ cup pumpkin seeds

½ cup sesame seeds

DIRECTIONS

In a bowl, mix the almonds with orange rind, orange juice, coconut, pumpkin and sesame seeds and stir well. Drain dates, add them to a food processor, blend well, add this over the orange mixture and stir everything. Spread this on a lined baking sheet, place in the oven at 350 degrees F and bake for 15 minutes, stirring every 4 minutes. Take biscuits out of the oven, leave aside to cool down and serve for breakfast.
