CREAMY CAULIFLOWER SOUP
INGREDIENTS
1 yellow onion, chopped
2 tablespoons extra virgin olive oil
2 pounds cauliflower florets
A pinch of sea salt and black pepper
½ teaspoon turmeric powder
2 garlic cloves, minced
5 cups veggie stock
DIRECTIONS
Heat up a saucepan with the oil over medium heat, add the onion and garlic. Stir and sauté for 10 minutes. Add cauliflower, salt and pepper. Again stir and cook for 12 more minutes. Add the stock, bring to a boil, reduce heat to medium and simmer for 25 minutes. Transfer to a blender, add the turmeric powder, pulse well. Pour into bowls and serve.
