BANANA & LEMON PANCAKES

INGREDIENTS

4 eggs

2 bananas, peeled and chopped

¼ teaspoon baking soda

2 tablespoons lemon juice

Cooking spray

DIRECTIONS

In a blender, mix eggs with the bananas, baking soda, lemon juice, and pulse well. Heat a pan greased with cooking spray over a medium-high heat, add half of the batter, spread into the pan, cook for 1 minute on each side and transfer to a plate. Repeat this with the rest of the batter and serve for breakfast.
