PUMPKIN & AVOCADO BURGER

INGREDIENTS

4 ounces pumpkin flesh, peeled

4 slices paleo bread

1 avocado, pitted and peeled

1 carrot, grated

2 lettuce leaves

DIRECTIONS

Spread the pumpkin flesh in a tray, bake at 350 degrees F for 10 minutes, transfer to a bowl and mash it with a fork. Put the avocado in separate bowl and mash it with a fork. Spread avocado on 2 paleo bread slices, also divide the grated carrot, mashed pumpkin and the lettuce leaves on each and top them with the other 2 bread slices and serve for breakfast.
